This is one of my faves for winter. In winter we all tend to overdose on comfort food. Here in England that's roast dinners, sausage and mash and hearty pies. Well this cassarole combines all those lovely british flavours in a very healthy alternative that still gives you that comfy warming feeling on a blustery day.

Sausage Cassarole
(serves 4 at around 400 calories per portion)

Lightly grill 8 Sausages on a medium heat as you prepare the rest of the ingredients (5-10mins) this is just to color them more than anything else, when buying your sausages check the back of the package for fat percentages, i use ones that are over 90% pork as lots of brands just pad them out with lots of fats
Then add all of the below ingredients to a cassarole dish and mix well
1 400g tin of Green Lentils
1 400g tin of chopped tomatoes
1 tbsp tomato puree
100g frozen peas
2-3 cloves garlic, crushed
1 onion, finely chopped
1 tbsp dried thyme
1 tbsp dried rosemary
Add the sausages, pop on a lid or tightly wrapped tinfoil if you don't have one and pop in the oven at 200 degrees for at least an hour, two if you have time.
